Did someone say Pumpkin? these muffins are amazing all year along but their is something about fall time and pumpkin . These muffins are so amazing with the cream cheese mixed into the pumpkin . The cream cheese takes this muffin to a whole new level .. The 1st time I made these for my kids the whole house smelled amazing and really drives that fall feeling .
Ingredients :
1). 15 ounces one can of pumpkin pure ( no pumpkin pie filling)
2). 2 large eggs
3). 1/2 cup of olive oil
4). 1 3/4 cups of flour
5). 1 tablespoons of vanilla extract
6). 1 teaspoon baking soda
7). 1/2 cup brown sugar
8). 1 tablespoon pumpkin spice
9). 1/2 teaspoon of salt
10). 1 cup of granulated sugar
Cream Cheese Swirl :
1). one whole 8oz of cream cheese
2). 1 large egg yolk
3). 1/4 cup of sugar
4). 2 teaspoons of vanilla extract
Instructions:
1). pre - heat your oven to 375 degrees
2). in either a stand mixer bowl or a large bowl you want to add the pumpkin spice, salt ,flour and baking soda into the bowl and mix it all together .
3). In a different bowl you will want to add the one 15 oz can of pumpkin pure ( remember to not use pumpkin pie filling they are different .) add the brown sugar , vanilla extract to the bowl too .. You will want to mix all of the ingredients together .
4). Then take the Flour mixture and start to add that to the wet ingredients . When adding the ingredients beat everything or stir everything well until everything is well blended .
5). In a different bowl you will want to make the cream cheese swirl . Take the 8 oz of cream cheese and make sure it is room temp. It will make mixing the ingredients a lot better then trying to make it when it is cold . It will also not swirl easy in the muffins and the rest of the batter that easy .
6). Add the egg yolk to the cream cheese ,1/4 cup of sugar,and 2 teaspoons of vanilla to the bowl also
7). Beat or stir all that together until nice and smooth . I find using a hand mixer or a stand mixer work so much better in this step then trying to stir all together
8). Take a muffin pan and you will want to line the muffin pan with muffin liners. Then you want to scoop half of the pumpkin mixture into the liners . Then you want to take your cream cheese mixture and i say about a tablespoon and put that into your pumpkin batter. After that you will want to take another scoop of batter and put that on top of the cream cheese . Then you will want to take a tooth pick and swirl the two together . Then repeat the this all the way through .
9). Once all the muffins have been swirled then you want to put your pan in the oven at 350 for about 20mins . check with a tooth pick after 20mins it should come out clean if not leave them in the oven until your tooth pick comes out clean
