Chocolate Pound Cake with Vanilla Bean Glaze

I love Making different kinds of Cake .. I have all ways wanted to make a Pound cake and let me tell you this one is so good .. When I was a kid my dad would come home at times with store bought Pound cake and I would love either to eat it with fruit on top or just alone with nothing on it .. I think I love pound cake cause of the richness of the cake .. I was so happy to make this one cause I love chocolate and since I was a child I have loved chocolate .. This cake is amazing and it is so rich that you need a glass of milk with it cause of all the richness in the cake .. The frosting is so good and the fresh Vanilla bean in the frosting is the perfect touch too ..



CAKE INGREDIENTS :

1 1/2 sticks ( 12 tablespoons) salted butter at room temperature

1 1/4 cups of all purpose of flour

3/4 cup of dutch-process cocoa powder

1/4 teaspoon of salt

1/2 cup of whole milk

1 teaspoon instant espresso powder

1 teaspoon vanilla extract

1 1/2 granulated sugar

3 eggs


CAKE GLAZE INGREDIENTS:

2 cups powdered sugar

pinch salt

3 to 4 tablespoons of whole milk

1 vanilla bean, split lengthwise

INSTRUCTIONS:

1). Preheat your oven to 350 . Take a 9 to 5 inch loaf pan and butter the sides of the loaf pan . You also can take the loaf pan and line it with parchment paper and leaving a overhang on the the sides .

2). Sift together the flour , cocoa powder, baking powder , and the salt ,and the instant espresso powder.

3).Combine the butter and the granulated sugar in a stand mixer fitted with the paddle attachment . Beat the butter and the sugar on medium-high speed, scraping down the sides of the bowl half way through .Until the butter and sugar is light and fluffy , Beat this for about 3 minutes . Turn the mixer to low speed beat in the eggs add one egg at a time .Before you beat in another egg make sure the other egg is all the way is mixed in . After that the eggs are total in take half of the flour mixture and add it to the bowl and let it total mix in .. Then take your 1/2 cup of whole milk and add it to the mixture . After that is mixed into the flour mixture you then need to add the rest of the flour mixture . Beat the mixture on high for 15 sec until the mixture until it is smooth and light

4). Scrape the batter into the pan and smooth the top . Bake until the toothpick comes out clean . Bake about 1 hour and 10 mins . When the cake comes out put the cake on rack for about 10mins . Then after 10 mins . take the cake out of the pan and then let the cake cool on the rack until it is total cool .

5). For the glaze whisk the powdered sugar and the salt in a medium bowl . Then whisk in about 3 tablespoons of milk to make the glaze smooth and a thick glaze . If you need to add 1 more Tablespoon milk if you need too .. Scrape the seeds from the vanilla bean and whisk the seeds from the vanilla bean into the glaze . Pour the glaze over the cool cake and then use the back of the spatula or a back of a spoon . Let the glaze harden before cutting into the cake and it will take about 2hrs .
